Tortilleria Nixtamal is the city’s premier source of freshly made masa. The staff at this Queens-based restaurant soak and grind fresh corn kernels in the wee hours of every morning, pressing most of the chewy, corny dough into tortillas. But perhaps no snack better captures the taste of fresh masa than their tamales, filled with everything from spicy chipotle chicken to pineapple and raisin. Enhanced with lard and chicken stock, the steamed masa is aromatic and deeply flavorful. Its pleasantly grainy texture is occasionally dotted with chunks of whole kernels, a pleasant surprise for those accustomed to inferior alternatives.
